Goat Tacos
Tacos are a must in the regular meal rotation and ground goat makes excellent tacos. Raise them to gourmet and preservative free level by mixing up the seasoning and tortillas on your own! Don’t forget to be prepared with all your favorite taco garnishes!
Mix the Seasoning:
1 T chili powder
1/4 t garlic powder
1/4 t onion powder
1/4 t crushed red pepper flakes
3/4 t dried oregano
1/2 t paprika
1 1/2 t ground cumin
1 t sea salt
1 t black pepper
Make the tortillas:
2 cups all purpose flour
3/4 t salt
3/4 cup water
3 T olive oil
Combine flour and salt. Stir in water and oil. Knead several times, adjusting as needed the flour or water for a smooth dough. Allow to rest for a few minutes.
Divide into 8 balls. Roll each very thin. Cook one at a time in a hot, dry cast iron skillet about 60 seconds each side. Adjust heat as needed for your stove.
Brown the ground goat in olive or coconut oil.
*Pour off most of the fat. Important step for flavor.
Stir in seasonings thouroughly.
Store leftover tortillas in the fridge in a sealed container and use them for breakfast burritos in the morning!
