Braised Goat Shanks with Tomatoes & Thyme

Ingredients:

  • Goat shanks

  • onion

  • celery

  • carrot

  • tomato sauce

  • diced tomatoes

  • salt, pepper, thyme

Salt shanks the day before and leave in fridge. *Important step for flavor and texture.

Bring to room temperature the next day.

Chop and saute some onion, celery, and carrots until soft in your choice of fat. Pour into crockpot.

Brown shanks on each side. Add to crockpot.

Add 1 can of diced tomatoes, and 1 can of tomato sauce so the shanks are submerged.

Add salt, pepper and thyme to taste. I like to go heavy on the thyme and not so light on the salt and pepper either, but since the shanks were salted the day before you don’t want to overdo.

Cook in crockpot on low about 4 hours.

Serve with whatever form of potato you are in the mood for. Or mac and cheese, or rice…oh the possibilities.
